Cashew Egg Nog


1 cup raw cashews
2 cups water
1 can full fat coconut milk (not light)
1/3 c maple syrup (or to taste)
1 t vanilla extract
1 t nutmeg
½ t cinnamon
dash salt


Soak cashews 4 hours or overnight in water. Drain and rinse. Add all ingredients to a high speed blender and blend until smooth. If blender is not high speed, strain with a fine mesh sieve or nut milk bag. Chill and enjoy!
