Pumpkin Spice Baked Oatmeal


2 c rolled oats
1 t pumpkin pie spice (more to taste)
1/4 c maple syrup
1 c pumpkin ( I used canned)
2 T melted coconut oil
3/4 c almond milk
1/4 t salt
1/2 t baking soda
1/3 c pecans
3 T almond butter or other nut butter of choice
1/3 c Vanilla Complete powder
Optional: 1/4 c chocolate chips!


Combine all ingredients. Spread into greased 8x8 or 11x7 baking dish. Bake at 375 for 45 minutes.

It's good reheated in squares, in toaster oven, the next day!!

Double ingredients for a 9x12 pan.

Also you can cook in muffin tins. Takes less time (maybe 25) for muffins.



Cashew Egg Nog


1 cup raw cashews
2 cups water
1 can full fat coconut milk (not light)
1/3 c maple syrup (or to taste)
1 t vanilla extract
1 t nutmeg
½ t cinnamon
dash salt


Soak cashews 4 hours or overnight in water. Drain and rinse. Add all ingredients to a high speed blender and blend until smooth. If blender is not high speed, strain with a fine mesh sieve or nut milk bag. Chill and enjoy!
